Tattie Hushie
Tattie Hushie is an English potato soup with leek, oatmeal, pepper and ketchup (or the equivalent tomato sauce).
Ingredients
- 1 1/2 lb potatoes peeled and diced
- 1 large leek thinly sliced
- 2 oz butter
- 1 oz medium coarse oatmeal
- 2 pint skimmed milk
- 2 tsp salt
- 1 good grinding black pepper
- 1 tbsp tomato sauce or ketchup
Instructions
- Cook the potatoes in water until almost tender.
- Add the leek and cook for a further 5 minutes.
- Drain and mash thoroughly with the butter.
- Mix in the oatmeal, milk and seasonings. Stirring constantly, gently bring to just below boiling point.
- Serve with a swirl of the tomato sauce.
