  • 2 Medium tomatoes blanched, peeled and chopped
  • 1 Medium onion finely chopped
  • 1 Green chilli finely chopped
  • Lime or lemon juice
  • Salt and pepper to taste
  • 2 Tbs Grated fresh coconut or desiccated shredded coconut


  • Combine the tomatoes, onion and chilli in a small bowl. Pour over the lime or lemon juice and season to taste.
  • Spoon into a shallow serving dish and scatter over the coconut.
  • Cover the bowl and chill in the refrigerator until you are ready to serve.
