  • 12 oysters in the shell
  • 3 tablespoons finely chopped onion or chives
  • 1 hard-boiled egg
  • 2 oz jar black caviare


  • Oysters must be absolutely fresh.
  • Arrange oysters on a bed of ice.
  • Sprinkle with chopped onion or chives.
  • Separate egg white from egg yolk.
  • Finely chop egg white, sieve egg yolk and sprinkle both over oysters.
  • Top oysters with black caviare and serve immediately.
