Russian Oysters

Ingredients
- 12 oysters in the shell
- 3 tablespoons finely chopped onion or chives
- 1 hard-boiled egg
- 2 oz jar black caviare
Instructions
- Oysters must be absolutely fresh.
- Arrange oysters on a bed of ice.
- Sprinkle with chopped onion or chives.
- Separate egg white from egg yolk.
- Finely chop egg white, sieve egg yolk and sprinkle both over oysters.
- Top oysters with black caviare and serve immediately.
