
Potatoes with Tomato Sauce
Ingredients
- 2 tbsp olive oil
- 1 clove garlic peeled and crushed
- 1 small onion finely chopped
- 14 oz canned tomatoes sieved
- 1/2 pint water
- pinch of chilli powder
- 1/2 tsp dried oregano
- 3 tbsp fresh chopped
- parsley
- 2 lb small potatoes quartered
Instructions
- Heat the oil in a pan and fry the garlic and onion for 10 minutes.
- Add remaining ingredients except the potatoes, bring to boil and simmer for 15 minutes.
- Add the potatoes and simmer gently for 40 minutes until tender. Serve hot.
