Ingredients
 

  • 2 tbsp olive oil
  • 1 clove garlic peeled and crushed
  • 1 small onion finely chopped
  • 14 oz canned tomatoes sieved
  • 1/2 pint water
  • pinch of chilli powder
  • 1/2 tsp dried oregano
  • 3 tbsp fresh chopped
  • parsley
  • 2 lb small potatoes quartered

Instructions

  • Heat the oil in a pan and fry the garlic and onion for 10 minutes.
  • Add remaining ingredients except the potatoes, bring to boil and simmer for 15 minutes.
  • Add the potatoes and simmer gently for 40 minutes until tender. Serve hot.
