Phulka (India)
Ingredients
- 13 oz wholemeal flour
- 4 1/2 oz strong white flour
- 8 1/2 oz warm water
Instructions
- Sift 375 g wholemeal flour and 125 g strong white flour and mix in 250 ml warm water to make a fairly soft dough.
- Knead for 15 minutes, then leave to relax for 30 minutes.
- Knead again, mould into balls and flatten, then roll out into 15 cm rounds, stretching them well.
- Cook quickly on both sides on a hot griddle.
