Borscht is a delicious beet soup traditionally served in Eastern Europe. Learn how to make borscht with this recipe!
Ingredients
- 2 1/4 lb raw beetroot
- 2 medium sized onions skinned and chopped
- 4 pint seasoned beef stock
- 2 tbsp lemon juice
- 3 floz dry sherry
- soured cream chives for seasoning
Instructions
- Grate the beetroot coarsely and put it together with the onion in a pan with the stock.
- Bring to the boil and simmer without a lid for 45 minutes.
- Strain and add the lemon juice and sherry. Adjust seasoning.
- Serve either chilled well or hot with a whirl of soured cream and chopped chives
