London Fried Skate
Ingredients
- 2 lb skate wings cut into 4 pieces if large
- batter
- sunflower oil for frying
- lemon wedges to garnish
for the simple blender batter
- 1 cup plain flour All purpose, sifted
- 1 egg
- Pinch of salt
- 6 tablespoons skimmed milk
Instructions
- Prepare the batter for the skate wings (see below) in advance.
- Wash the fish and pat it dry with kitchen paper.
- Cut each wing in half so that you have 4 nice wedges of skate.
- Heat l in (2.5cm) oil in a large frying pan or wok until you can just detect a slight haze.
- Dip each piece of skate into the batter and fry for 2 to 4 minutes on each side.
- Drain very well on kitchen paper before serving with lemon wedges.
to make the batter
- Put all the ingredients into the bowl of a food processor or blender and whizz for about 45 seconds or until the mixture is smooth.
- Leave the batter to rest for an hour before using.
