Drambuie creams

Be careful not to whip the cream too stiffly otherwise the dessert may become too thick when the other ingredients are added.
This is an unusual adaptation of the famous Scottish drink Atholl Brose, which is made from Scotch whisky, cream and oatmeal.
Drambuie is a famous Scottish liqueur, based on the finest Scotch whisky. The name Drambuie is derived from the Gaelic an dram buideach: 'the drink that satisfies'. The secret recipe is alleged to have been given to the Mackinnon family by Bonnie Prince Charlie in return for saving his life.

ingredients

serves 12
850 ml (1 1/2 pints) double cream
75 g (3 oz) fine oatmeal
50 g (2 oz) icing sugar
4 tablespoons Drambuie

method

1. Heat the grill to moderate.

2. Spread the oatmeal out in a thin layer on a baking sheet, and grill for 3-4 minutes, turning once, until lightly toasted. Remove and leave to stand until completely cold.

3. Pour the cream into a large bowl and whip until it stands in soft peaks.

4. Add the cold oatmeal, icing sugar and Drambuie and stir until thoroughly mixed.

5. Spoon into individual glasses or small ramekins and chill in the refrigerator for 30 minutes before serving.
