  • 4 firm ripe pears
  • 8 1/2 floz vanilla ice cream
  • 8 1/2 floz chocolate sauce
  • 4 floz double cream heavy cream

for the decoration

  • 1 oz crystallized violets


  • Peel the pears, cut them in half, and remove the cores.
  • Place a scoop or slice of ice cream in each of 4 dishes.
  • Top with the pear halves and mask with chocolate sauce.
  • Whip the cream until stiff, and pipe a large rose on top of each portion.
  • Decorate with the crystallized violets
