Tournedos Rossini
Tournedos Rossini is a mouth-watering dish cooked with beef tenderloin, mushrooms, and a reduction sauce. It's so easy to make and everyone loves it!
Ingredients
- 10 tournedos each weighing about 200g
- 3 1/2 oz butter
- 10 croutons round
- 10 slices foie gras
- 3 1/3 floz Madeira
- 7 floz jus lie or demi-glace
- 10 slices of truffle
- 4 tbsp butter
- salt and pepper
Instructions
- Heat the butter in a saute pan.
- Season the tournedos, place in the pan and fry to the required degree and to a golden brown on both sides.
- Remove the strings from the tournedos and place on the croutons on an oval dish.
- Drain the fat from the pan, add the Madeira and reduce by half, add the sauce, reheat, correct the consistency and season. Pass through a fine strainer, reheat and add knobs of butter off the heat.
- Place a sauted slice of foie gras and a thin slice of truffle on each tournedos, mask with the sauce and serve.
