
Tagliatelle alla Carbonara
Ingredients
- 1 lb tagliatelle
- salt and pepper
- 4 oz smoked rindless bacon diced
- 2 tablespoons oil
- 1 oz butter
- 2 eggs lightly beaten
- 1/4 pint single cream
- 2 tablespoons chopped parsley
- 2 oz Parmesan cheese grated
Instructions
- Cook the tagliatelle in a large saucepan of boiling salted water for 10 - 12 minutes until just tender. Drain and place in a serving dish. Keep warm.
- Fry the bacon in the oil or butter until crispy, reduce the heat, then add the eggs, cream, parsley, seasoning to taste and half of the Parmesan.
- Heat gently, without boiling, stirring. Pour the sauce over the pasta, then sprinkle the remaining Parmesan cheese on top and serve immediately.
- For a really quick and easy pasta dish, stir 100 g (4 oz) cream cheese with garlic and herbs into the hot drained pasta.
