
Mexican Style Chow Chow
Chow chow (also called chayote, vegetable pear or christophine) could be replaced with courgettes or cucumber.
Ingredients
- 1 chow chow peeled, stoned, and sliced lengthways
- juice of 1/2 lemon
- 14 oz canned tomatoes drained and sieved
- 2 tbsps Greek yogurt
- 1 tsp paprika
- 1 small fresh green chilli deseeded and very finely sliced
Instructions
- Sprinkle the chow chow with lemon juice and steam for about 10 minutes or until tender.
- Cook the tomatoes in a large frying pan until thick and pulpy.
- Stir in the yogurt and paprika.
- Transfer the steamed chow chow to a heated serving dish, pour over the creamy tomato sauce and garnish with chilli.
