Parsnip and Apple Casserole
Ingredients
- 14 oz parsnips
- 6 3/4 floz apple sauce
- fat for greasing
- 1/3 cup brown sugar
- salt
- 1/2 tsp grated nutmeg
- 1 tbsp lemon juice
- 1/3 cup butter
- 1 1/4 cup soft white breadcrumbs
- 1/4 tsp paprika
Instructions
- Prepare and boil or steam the parsnips.
- Mash or sieve them.
- Arrange with the apple sauce in layers in a greased casserole.
- Sprinkle each layer with brown sugar, salt, nutmeg, lemon juice, and flakes of butter.
- Top with the breadcrumbs and sprinkle with paprika.
- Cook in a fairly hot oven, 190°C, Gas 5, for 30 minutes.
