Colcannon is a traditional Irish dish made with mashed potatoes, cabbage, butter, and swede. It's often served on St. Patrick's Day or other festive occasions.

  • 8 oz potatoes peeled and cubed
  • 8 oz swede rutabagass, peeled and cubed
  • 8 oz carrots peeled and cubed
  • 4 oz cabbage shredded
  • 2 oz butter
  • 1 tbsp spicy brown table sauce


  • Cook all the vegetables together until tender.
  • Drain well and mash thoroughly, adding the butter and brown sauce.
  • Serve piping hot.
