Colcannon
Colcannon is a traditional Irish dish made with mashed potatoes, cabbage, butter, and swede. It's often served on St. Patrick's Day or other festive occasions.
Ingredients
- 8 oz potatoes peeled and cubed
- 8 oz swede rutabagass, peeled and cubed
- 8 oz carrots peeled and cubed
- 4 oz cabbage shredded
- 2 oz butter
- 1 tbsp spicy brown table sauce
Instructions
- Cook all the vegetables together until tender.
- Drain well and mash thoroughly, adding the butter and brown sauce.
- Serve piping hot.
