
Courgette Curry
Ingredients
- 1 tbsp oil
- 1 tsp cumin seed
- 1 tsp mustard seed
- 1/2 tsp chilli powder
- 1/4 tsp ground turmeric
- 8 oz canned tomatoes and juice
- 1 green chilli seeded and finely chopped
- 8 oz courgettes cut into 5 mm (1/4 inch) slices
- Salt
- 1 tbsp cornflour mixed with 3 tbsps water optional
Instructions
- Heat the oil for 30 seconds on HIGH and add the cumin seed, mustard seed, chilli powder and turmeric. Cook for 1 - 2 minutes on HIGH.
- Add the tomatoes and juice, chilli pepper and courgettes. Cover and cook on HIGH for 3 minutes.
- Add salt to taste and leave to stand for 1 minute before serving.
- If desired, thicken the sauce with the cornflour and water. Cook for a further 1 - 2 minutes on HIGH.
