Summer Soup #2

ingredients

1.2 lb (225 g) onions, sliced
2 pints (1.1 litres) vegetable stock
l lb (455 g) sweetcorn kernels
4 oz (110 g) bean sprouts (mung, aduki, etc.)

method

1. Simmer the onion in one cup of stock until tender.
2. Add the sweetcorn and the remaining stock, cover and simmer for 20 minutes.
3. Serve garnished with beansprouts.
