225 g (1/2 lb) dried white haricot beans
175 ml (6 fl oz) Basic Garlic Dressing
2 cloves garlic, crushed
1 large red pepper, seeded and thinly sliced
2 small leeks, thinly sliced
7 g (1 tbsp) finely chopped spring onions (green part only)
method
Cover the beans with boiling water and leave to soak overnight.
Pour off the soaking water. Cover with fresh water and boil for 1 1/2 - 2 hours, until tender. You may need to add more water from time to time to prevent them sticking.
Drain the beans and, while still hot, pour over the Basic Garlic Dressing.
Stir in the crushed garlic and cool until needed.
Before serving, stir in the pepper and leeks and sprinkle with the chopped spring onions.
Variation Omit the spring onions, and stir in 15 g ( 2 tbsp) of coarsely chopped fresh mint just before serving.
