Elderflower Water Ice

A water ice like this refreshes the palate between courses. It can also be served as a very light dessert.

ingredients

serves 6
600 ml (1 pt) water
250 g (8 oz) fruit sugar
6 heads elderflowers
juice of 1 lemon
2 egg whites

method

1. Heat the water and add the sugar, stirring until dissolved.

2. Add the elderflowers and lemon juice and bring to the boil.

3. Strain the syrup through a jelly bag. Allow it to cool, then freeze.

4. When the syrup is half frozen, beat the egg whites until stiff and fold into the syrup.

5. Freeze in individual dishes.
