Steamed Seafood Packets

Very neat and delicate, these steamed packets make an excellent starter or a light lunch.

ingredients

serves 4
225 g (8 oz) crab meat
50 g (2 oz) shelled prawns, chopped
6 water chestnuts, chopped
30 ml (2 tbsp) chopped bamboo shoots
15 ml (1 tbsp) chopped spring onion
5 ml (1 tsp) chopped root ginger
15 ml (1 tbsp) soy sauce
15 ml (1 tbsp) fish sauce
12 rice sheets
banana leaves
oil for brushing
15 ml (1 tbsp) soy sauce
2 spring onions, shredded, to garnish
2 red chillies, seeded and sliced, to garnish
coriander leaves, to garnish

method

1. Combine the crab meat, chopped prawns, chestnuts, bamboo shoots, spring onion and ginger in a bowl. Mix well, then add the soy sauce and fish sauce. Stir until blended.

2. Take a rice sheet and dip it in warm -water. Place it on a flat surface and leave for a few seconds to soften.

3. Place a spoonful of the filling in the centre of the sheet and fold into a square packet. Repeat with the rest of the rice sheets and seafood mixture.

4. Use banana leaves to line a steamer, then brush them with oil. Place the packets, seam-side down, on the leaves and steam over a high heat for 6 - 8 minutes or until the filling is cooked. Transfer to a plate and garnish -with the remaining ingredients.
