1. Wipe the spare ribs and leave them in sections of several ribs as you bought them.
2. Rub with salt, dust lightly with five spice powder and pepper; leave for 1 hour.
3. Blend the soy sauces with sherry, honey, hoisin sauce and garlic.
4. Finally stir in the oil. Pour this marinade over the ribs and spoon onto the surface.
5. Leave for 2 - 4 hours, turning occasionally.
6. Put on a wire rack above a roasting tin containing 5 mm (1/4 in) of water to catch the drips of marinade from the ribs.
7. Cook at 200°C (400°F) Gas 6 for 20 minutes
8. Baste again if desired, then reduce the heat to 175°C (350°F) Gas 4 for a further 35 - 45 minutes or until the ribs are cooked.
9. Cool for a few minutes then divide into separate ribs and arrange attractively on a hot platter garnished with spring onion curls.
10. You can serve these ribs with an accompaniment of salad and rice.
