50 g (2 oz) butter
60 ml (2 1/2 oz) olive oil
300 g (10 1/2 oz) feta
a large bowlful of iced water
flour, seasoned with sea salt and black pepper for coating the cheese
method
1. Heat the butter and oil together in a frying pan. Meanwhile cut the feta up to narrow fingers and put them in a bowl of iced water for several seconds. This will make the flour stick to the cheese and help to form the crust.
2. Roll the cheese in the seasoned flour and fry until crisp and golden on the outside, with cheese melting inside.
