Oriental prawn salad

ingredients

serves 2.
150 g (5 1/2 oz) fine green beans, halved
350 g (12 oz) ripe mango
150 g (5 1/2 oz) fresh beansprouts
4 spring onions, sliced
300 g (10 1/2 oz) cooked tiger prawns, peeled
150 g (5 1/2 oz) Chinese leaves, shredded

for the dressing

zest and juice of 1 lime
1 tablespoon clear honey
1 tablespoon Thai fish sauce
2 tablespoons chopped fresh coriander

method

1. In a small saucepan, cook the beans for 2 - 3 minutes in lightly salted, boiling water

2. Drain and refresh them under cold running water

3. Peel the mango and dice the flesh roughly.

4. Toss the mango together with the cooked beans, beansprouts, spring onions, prawns and Chinese leaves.

5. Mix together the dressing ingredients and drizzle this over the salad.

6. Toss everything together well and pile the salad into a serving bowl.
