1. Spray a small frying pan with low fat cooking spray and fry the mushrooms until softened.
2. If the mushrooms ooze a lot of liquid as they cook, drain this off.
3. Beat together the eggs, creme frafche, chives and seasoning, and pour this mixture over the mushrooms.
4. Cook, stirring, until the eggs start to scramble. Serve immediately.
