Mushroom Salad

Preparation time 10 minutes, plus 30 minutes to chill,
Calories 115 per portion

ingredients

serves 4
450 g (1 lb) button mushrooms

For the dressing
2 cloves garlic, crushed
3 tablespoons oil
1 tablespoon lemon juice
salt and pepper
2 tablespoons chopped fresh mint

method

1. Wipe the mushrooms and place in a serving bowl. Mix the dressing ingredients together well. Pour over and toss the mushrooms in the dressing.

2. Chill for at least 30 minutes before serving.

Cook's Tip
Scoop out bread rolls, brush all over with melted butter or margarine and bake until crisp. Serve the salad in the cooled rolls to make a delicious starter.
