Pork Fillet Flambe

ingredients

serves 4
625 g (1 1/4 lb) fillet of pork steaks 2.5 cm (1 inch) thick
1/8 cup (30 g) 6 teaspoons butter
2 tbsp brandy
13 oz (410 g) canned apricot halves 5 tbsp soured cream
1 tsp salt
1 tbsp lemon juice

method

1. Brown meat in heated butter in a heavy-based saucepan.

2. Heat brandy, pour over meat and ignite. Shake the pan to and fro until flames are extinguished.

3. Add heated apricots and juice and simmer for a few minutes.

4. Add soured cream, seasoning and lemon juice.
