450 g (1 lb) small leeks
6 eggs
1 slice wholemeal bread crumbled
30 ml (2 tbsp) cider vinegar
100 g (4 oz) Stilton cheese
method
1. Preheat the oven to 200°C (400°F) Gas 6.
2. Trim and wash the leeks.
3. Steam for 10 - 15 minutes.
4. Lay them in a greased ovenproof dish.
5. Beat the eggs with the vinegar and breadcrumbs and crumble in the Stilton.
6. Pour over the leeks and bake for 30 minutes until risen and golden.
