Blue Cheese Pâté recipe

This mixture is useful as a filling for fruit (especially good with pears) or choux pastry, for stuffed tomatoes or celery, or as a salad dressing, in which case add more cream or creamy milk.

1. Liquidize the cheeses with just enough cream to reach the required consistency.
2. Refrigerate the mixture until required. It will firm up considerably.
