Paprika Mushrooms

ingredients

25 g (1 oz) butter or margarine
1 medium onion, finely chopped
1/2 green pepper, seeded and finely chopped
10 g (1 tbsp) paprika
350 g (12 oz) mushrooms, sliced
150 ml (1/4 pt) sour cream
salt and pepper
chopped parsley

method

1. Heat the butter, add the onion and cook until it has just softened but not browned.

2. Add the green pepper and paprika and cook on a low heat for 3 minutes.

3. Add the mushrooms, stir well and cook for a further 5 minutes until they are soft.

4. Stir in the sour cream, season to taste and warm through gently.

5. Serve, sprinkled with parsley, as a vegetable accompaniment, as an hors d'oeuvre with hot French bread, as a filling for vol-au-vent, or on fried bread or with a crisp salad, as a light supper.
