Cheese Cakes (Pasticcine al Formggio)

ingredients

serves 4
450 g (1 lb) potatoes, peeled and grated
1 red onion, chopped
275 g (10 oz) 2 1/2 cups hard cheese, grated
30 ml (2 tbsp) chopped fresh coriander (cilantro)
Pepper
25 g (1 oz) 2 tbsp butter

method

1. Mix the potatoes, onion, cheese, coriander and pepper together in a bowl and shape into 8 round cakes.

2. Squeeze out any excess liquid and leave to drain on kitchen paper for 1 minute.

3. Melt the butter in a frying pan and cook the cakes on each side until brown and crispy. Serve hot or cold.
