1. Pat the whitebait dry with kitchen paper. (It is often sold frozen and when thawed needs to be dried).
2. Toss the fish in seasoned flour and deep fry in hot oil for a few minutes until golden brown and crisp.
3. Serve with lemon wedges, parsley sprigs and Tartare Sauce.
4. Offer thinly sliced wholewheat bread and butter.
