method
1. Fillet the herrings or ask the fish shop to do this for you.
2. Wash thoroughly under cold running water, and flatten out.
3. Steep the herring in the milk for about half an hour, drain and dip in seasoned flour.
4. Dip the fish in beaten egg and then coat generously in coarse oatmeal.
5. Shallow fry in hot oil, stomach side down first, until crisp and golden on either side.
6. Serve with wedges of lemon and Mustard Sauce.
7. New potatoes are usually served with this dish.
