It is important to use a strong brew so that the coffee compliments the whiskey rather than being drowned by it.

ingredients

serves 1
30 ml (1 tbsp) Irish whiskey
15 g (1 tsp) brown sugar
150 ml (1/4 pt) strong coffee
45 ml (3 tbsp) double cream

method

1. Warm an Irish Coffee or long glass, add the sugar and whiskey and pour on the coffee.

2. To serve, pour the cream over a spoon onto the coffee and drink the warm liquid through the cool layer of cream.
