This recipe is from the Caribbean, so sweet potatoes from a West Indian store should be perfect. The yellower sweet potatoes from the Middle East will work just as well.
ingredients
1 kg (2 lb) sweet potatoes, peeled and thickly sliced
1 egg, beaten
45 g (1 1/2 oz) margarine
150 g (6 oz) dark soft brown sugar
4 g (1 level tsp) salt
5 g (1 tsp) ground cinnamon or cinnamon quill, crushed
method
1. Boil the peeled sweet potatoes in lightly salted water until cooked through.
2. Add the beaten egg and stir well while mixing in all the other ingredients.
3. Spoon the mixture into a greased shallow baking tin and bake at 180°C (350°F) Gas 4 for an hour.
