Chicken Breasts with Sesame Seeds

ingredients

serves 6
2 eggs
fresh rosemary, chopped
black pepper, freshly
ground
30 g (2 tbsp) fine matzo meal 45 g (3 tbsp) sesame seeds
1 kg (2 1/4 lb) chicken breasts (boneless) , cut into small pieces
vegetable oil for frying

method

Mix together the eggs, rosemary and black pepper.
Mix together the matzo meal and sesame seeds.
Dip pieces of the chicken into the egg then the sesame mixture.
When the oil is sizzling put in the chicken pieces.
When the chicken is golden-brown on one side, sprinkle generously with pepper and turn, sprinkling the other side when it has browned as well.
Drain on kitchen paper and serve.
