method
1. Split the cardamom pods, remove the seeds and lightly crush them with the back of a tablespoon.
2. mix the cardamom seeds, coriander, cumin, cayenne and turmeric together.
3. Heat the vegetable oil in a small saucepan, add the ginger and garlic and stir over a low heat for 1 minute. Do not allow the ginger to burn.
4. Add the onion to the saucepan and stir-fry for 3 - 4 minutes. Stir in the spices.
5. Blend the tomato puree and water together, add to the onion and spices, mix in the prawns and bring to simmering point over a low heat. simmer for 5 - 7 minutes, stirring occasionally. Decorate with sprigs of fresh coriander and serve with brown or saffron rice.
