method
1. Cut the liver into thin strips and put to one side.
2. Cut the orange in half lengthways.
3. Cut the zest and pith from one half, divide it into segments and remove as much of the membrane as possible.
4. Squeeze the juice from the other half.
5. Heat the margarine in a frying pan, add the onion and stir-fry for 2 minutes.
6. Add the liver and stir-fry for a further 3 - 4 minutes.
7. Pour the orange juice into the pan and stir well.
8. Simmer for 3 - 4 minutes, then add the orange segments and heat through.
9. Spoon the liver and orange into a serving bowl or onto a plate and sprinkle with parsley.
