1. Plunge the apricots in boiling water and leave for about 1 minute. Peel off the skins, halve them, remove the stones and roughly chop the flesh.
2. Slice the banana and place with the apricot, lemon juice, sugar, yogurt and almond essence in a blender and process until smooth.
3. Pour the fruit puree into a serving glass, sprinkle with a little ground cinnamon and chill until ready to serve.
