3 - 4 cups cooked macaroni
1/4 cup bottled French dressing
1/4 cup chopped pickled onion
1/4 cup diced tasty Cheddar cheese
1/2 cup chopped celery
1/2 cup chopped green capsicum
1/2 cup Mayonnaise (page 16)
salt
freshly ground pepper
crisp lettuce leaves or endive
sliced stuffed olives to garnish
method
1. Combine macaroni with French dressing, pickled onions, finely diced cheese, celery and capsicum.
2. Toss and chill well.
3. Add mayonnaise, toss to coat ingredients and adjust seasoning with salt and pepper.
4. Line a salad bowl with lettuce leaves and fill with the macaroni salad.
