1. Peel potatoes, cook until just tender in boiling, salted water and slice thickly.
2. Heat butter in a frying pan and fry potatoes until golden on both sides.
3. Arrange potato slices in a greased ovenproof dish and cover with egg, chives, parsley, mustard, salt and pepper to taste and ham.
4. Pour sour cream over and sprinkle with cheese.
5. Bake in a moderately hot oven 190-200°C (375-400°F) for 15 to 20 minutes or until hot and golden brown on top.
6. Serve immediately.
