Wholemeal Rock Cakes

ingredients

yield: 20
1 cup self-raising flour
1 cup wholemeal self-raising flour
1/2 teaspoon mixed spice
1/4 teaspoon ground nutmeg
1/2 cup raw or white sugar
90 g (3 oz) butter
1/2 cup dried mixed fruit
1 egg
1/4 cup milk

method

1. Sift flours and spices into a mixing bowl, adding any grist remaining in sifter.

2. Blend in sugar. Rub butter into flour mixture until crumbly. Stir in dried fruit.

3. Beat egg and add with milk.

4. Mix quickly to a soft dough using a round-bladed knife.

5. Place rough tablespoons of the dough onto a greased baking tray and bake in a hot oven 200-230°C (400-450°F) for 12 to 15 minutes until golden brown.

6. Serve warm or cold with butter.

With raisins and cherries

I have made this recipe ever since. It's very quick. The only downfall is that I was making it with an old fashioned small tea cup and we've only been getting about 8 cakes from the mix. I would advise doubling the mix and adding cherries and raisins for the dried fruit.

I just made these and they turned out fabulous. The best rock cakes I ever made! I used dried apricots, cherries and dark chocolate (one high in cocoa content) and doubled the mix and I'm glad I did as these won't last!
