1. Beat the egg yolks with the milk and caster sugar.
2. Whisk the egg whites until they form stiff peaks and fold them into the egg yolk mixture.
3. Mix the sliced strawberries with the strawberry jam and set aside.
4. Spray a 19 cm (7 1/2 inch) non stick frying pan with low fat cooking spray and add the egg mixture. Cover and cook over a medium to low heat for 5 minutes, until the egg begins to set.
5. Scatter the strawberry mixture over the omelette and, using a wooden spatula, fold one side of the omelette over the other Transfer it to a warmed plate and eat at once.
