8 oz (225 g) liver
2.25 litres (4 pints) water
piece of turnip, chopped
1 large carrot, chopped
1 onion, chopped
salt
pepper
pinch of ground cloves
1 tablespoon flour
method
1. Put the liver in a saucepan with the water and vegetables.
2. Bring to the boil and simmer for 1 hour.
3. Grate or mince the liver and return it to the pan with salt, pepper and the cloves.
4. Mix the flour with a little water and add to the pan. Simmer, stirring, for 5 minutes
