Cheese and Kipper Flan

ingredients

serves 4 - 5
4 oz (100 g) short crust pastry
2 eggs
2/3 cup (150 ml) 1/4 pt milk
4 oz (100 g) cheese, grated
8 oz (225 g) kipper fillets, flaked
pepper

method

1. Roll out the dough and use to line a 20 cm/8 inch flan tin.

2. Beat together the eggs and milk, then mix in the cheese, kippers and pepper.

3. Pour into the flan case and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 45 minutes or until the filling is set and golden brown.

4. Serve hot or cold.

Kippers are so tasty and deserve to be eaten outside of the breakfast table, and what better way to put them to use than this very simple and delicious recipe.

So simple is this recipe that it doesn't take much to commit it to memory.

For even more flavour I make my flan with a cheese pastry.

Great eaten hot with cus cus or good old mash and peas.
Or eat cold with a rice salad.
