Rhubarb and Raspberry Fool

ingredients

serves: 4 - 6
500 g carton custard
540 g can rhubarb, drained
250 g frozen raspberries, defrosted
2 tbsp creme fraiche (optional)

accompaniments (you may need these)

method

1. Mix together the custard, rhubarb and most of the raspberries with the creme fraiche if using.

2. Serve chilled, topped with the remaining raspberries.
