3 apples, cored, peeled and cut into 1/2 cm slices, coated in lemon juice to prevent browning
3/4 cup (75 g) 3 oz plain flour (All purpose)
pinch of salt
1 tsp icing sugar (confectioners sugar)
300 ml cold water
1 tbls (15 g) 1/2 oz butter, melted
2 medium size egg whites
oil for deep frying
icing sugar (confectioners sugar) to dredge
double cream (heavy cream) to serve
method
1. Sift the flour, salt and sugar into a bowl and stir in the water and butter.
2. Whisk the egg whites until stiff and fold in.
3. Coat the apple slices in the batter and deep fry in hot oil (190°C, 375°F) for approximately 3 minutes until crisp and golden.
