1. Preheat the oven to 180°C (350°F) Gas Mark 4..
2. Slice the bananas into an ovenproof dish, sprinkle with the sultanas and lemon juice.
3. Put the eggs and sugar into a bowl and whisk with an electric whisk until creamy.
4. Stir in the desiccated coconut and jam. Pour the mixture evenly over the bananas.
5. Place in the oven and bake for 25 minutes or until golden.
