Meat Loaf, American Style #2

ingredients

serves 4
175 g (6 oz) streaky bacon, rinded
8 oz (225 g) cooked meat, minced
40 g (1 1/2 oz) packet bread sauce mix
1/2 oz (15 g) cornflakes, crumbled
25 g (1 oz) onions, skinned and chopped
2.5 ml (1/2 tsp) dried mixed herbs
1 level tbsp (15 ml) tomato puree (paste)
2/3 cup (150 ml) 1/4 pt milk
salt and freshly ground pepper
1 egg, beaten

method

1. Butter a 450 g (1 lb) loaf tin and line with rashers of streaky bacon.

2. In a large bowl, mix together the minced meat, bread sauce mix, cornflake crumbs, onions, herbs and tomato puree.

3. Add the milk and seasoning to the beaten egg and stir into meat mixture. Beat well.

4. Turn into prepared tin, covered with foil. Bake in the oven at 200°C (400°F) mark 6 for 1 - 1 1/2 hours. Turn out and serve hot or cold.
