1. Separate the lettuce into leaves and arrange in a large salad bowl. Thinly slice the cucumber. Core, deseed and slice the pepper into rings. Chop the spring onions, if using, and remove the stalks from the watercress, separate into small sprigs. Scatter the salad vegetables over the lettuce.
2. To make the dressing, put all the ingredients in a screw-topped jar, shake well and pour over the salad.
Serve immediately.
Cook's Tip
If the variety of green salad ingredients is limited add lots of coarsely chopped parsley for a fresh taste.
