Tagliatelle with Blue Cheese Sauce

Preparation time 5 minutes ,
Cooking time 15 - 20 minutes,
Calories 665 per portion

ingredients

serves 4
450 g (1 lb) green tagliatelle
salt and pepper
300 ml (1/2 pint) single cream
100 g (4 oz) Danish Blue cheese
50 g (2 oz) chopped walnuts

method

1. Cook the tagliatelle in a large saucepan of boiling salted water for 10 - 12 minutes until just tender. Drain and place in a serving dish. Keep warm.

2. In a saucepan, over a very low heat, heat the cream. Crumble the Danish Blue with your fingers and add to the cream. Add the chopped walnuts and season well.

3. Heat until the cheese has melted and the sauce is hot-do not let the sauce boil or it will curdle. Pour the sauce over the tagliatelle and serve immediately.

Fresh, chilled pasta is available from many supermarkets and delicatessens. Cook for 3-5 minutes according to type.
