method
1. Preheat the oven to 400°F (200°C) Gas Mk 6.
2. Rub 3 oz (75 g) of the butter into the flour with the 2 tsp of sugar and mix to a dough with a little cold water.
3. Grease a 7 inch (17.5 cm) round cake tin or ovenproof dish and sprinkle with 2 oz (50 g) caster sugar.
4. Peel and core the apples, cut into slices and place a layer in the base of the dish.
5. Sprinkle with the remaining sugar and then place another layer of apples on top.
6. Roll out the pastry on a lightly floured board to about 1/8 inch (35 mm) thick and place on top of the apples, pushing the pastry neatly round the edges and allowing the excess pastry to fall back inside.
7. Bake in the oven for 10 minutes, then turn the heat down to 375°F (190°C) Gas Mk 5. and bake for a further 30 minutes.
8. Turn out onto a hot serving dish and serve with cream.
